Cookie Time

Tonight started cookie fest 2007. I spent the past few hours baking sugar cookies, gingerbread cookies, lemon bars, and making amaretto balls. A small drop in the massive amount of cookies planned for the family.

Now, I am not a baker. I can cook anything you can imagine but, baking tends to just not be my thing. Yet for some reason the cookies I have made so far are damn good. Over the next few days, I have the following to make: sugar cookie type 2, chocolate chocolate chip, peanut butter blossoms, rocky road fudge, and I'm not sure what else yet.

The funniest part about all of this? I'm diabetic and will end up eating very little of them. It is entirely worth the work though since the rest of the family enjoys them so much, especially Tony and the little guys. They could all eat their respective weight in cookies.

Wow, I just realized it is 3:30 in the morning. I knew I started late as baking is so much easier when you don't have a 2 and 4 year old underfoot (or wheel as the case may be) and begging to help. I do have some stuff set aside to do with them but, I want to wait until most everything else is done.

Although, now that I think about it, is waiting until I'm tired of baking cookies the right time to bake with the kids? Hmm, maybe I'll do that tomorrow instead of waiting.

And, I have to write Santa, I need to tell the old jolly elf that I need a stand mixer, having carpal tunnel syndrome makes mixing cookies a pain without one.
